Peppermint Green Smoothie

Hey Guys,

As you know by now I have a Green Smoothie or Juice every day but I want to start mixing it up a little to keep it interesting! I am Lov’n this little kick of peppermint flavour in this green smoothie variation.

-1/2 frozen banana
-1 cup baby spinach leaves
-1 cup coconut milk (or other nut milk)
-2 drops best-quality vanilla extract
-2-3 drops peppermint extract

If you’re trying to lose weight I’d swap the coconut milk with rice milk although it’s fine to have coconut milk occasionally.

I really can’t get enough of green smoothies. I was super excited today when I went to a friend’s house and he offered me a green smoothie! Most people offer coffee or soft drink which I don’t drink so I nearly fell off my chair when someone was offering me a smoothie! My kind of friend! And it also made me realise the importance of a good blender. The texture of his green smoothie was like velvet, it was so smooth. Much better than mine! I am dreaming of the day I buy a Vitamix Blender! (hint to Vitamix – feel free to send me a freebie and I will promote the shizzle out of it!)

Clean Eating Pumpkin Cupcakes with Chocolate Pumpkin Frosting

Loving these Chocolate cupcakes from The Gracious Pantry. They aren’t totally fructose-free but they are a much better choice than a regular cupcake.

Ingredients:
For the cupcakes:
1 c. canned pumpkin (not pumpkin pie mix, just pure pumpkin)
1/2 c. almond milk
2 egg whites
1/2 c. safflower oil (or any light-flavored oil)
1/2 c. honey
1 tsp. vanilla extract
2 c. whole-wheat pastry flour
1/4 tsp. salt
1 tsp. baking soda
1 1/2 tsp. ground cinnamon
1/2 tsp. ginger
1/4 tsp. ground cloves

For the frosting:
1/2 c. canned pumpkin
1/2 c. unsweetened cocoa powder
1/4 c. honey
1/4 c. unsweetened applesauce
1 tsp. vanilla extract

Directions:
For the cupcakes:
Preheat oven to 350 degrees. Line your cupcake tins with cupcake papers or grease the tin itself. In a large mixing bowl, whisk together your pumpkin, almond milk, egg whites, safflower oil, honey and vanilla extract. In a second mixing bowl, whisk together your flour, salt, baking soda, cinnamon, ginger and cloves. Whisk the flour mixture into the liquid mixture and blend well. If your batter is too thick, add a little extra almond milk (about 1/4 c. at a time until you reach a thick, yet runny consistency). Pour into tins, and place in the oven for 15-20 minutes or until a toothpick stuck in the middle of a cupcake comes out clean.

For the frosting:
Place all ingredients in a small mixing bowl, and whisk until well blended. Remove cupcakes from oven, allow to cool and spread frosting over the tops.

Makes about 16 cupcakes.

Cinnamon Sweet Potato and Kale Delight

-2 medium sweet potatoes
-1 bunch of curly kale
-½ cup raw walnuts
-1 tablespoon coconut oil
-1 tablespoon raw agave nectar (I am going to replace this with 1 tsp organic honey as Agave is higher in fructose)
-sprinkle cinnamon
-sea salt & pepper to taste

Clean sweet potatoes and poke holes with a fork on all sides. Roast in the oven at 375 degrees for 50-60 minutes. Check halfway through and rotate the potatoes.

With 25 minutes remaining, begin to prep the remainder of the dish. Wash and destem kale and place in a large sauté pan. Lightly steam for 5 minutes. Once kale becomes vibrantly green but is still somewhat crunchy, reduce heat and add one tablespoon of coconut oil, raw walnuts, and salt and pepper. Reduce heat to low and let the flavors combine.

Once potatoes are soft and cooked through, place on separate dishes to prepare. Cut each potato in half without breaking through. Season potato with coconut oil, salt, pepper and sprinkled cinnamon.

Top seasoned potato with kale mixture. Garnish lightly with raw agave nectar around the plate and serve!

* For my Aussie readers – Kale is hard to find but it does exist here! Woolworths have just started selling it and you can also find it in some fruit and vegetable stores. If you can’t find it ask you’re local fruit and veg store to get it in  for you, it’s one of the most nutritious greens available!

How to Manifest Your Dream Body

There is a specific art to manifesting the body of your dreams. Sure there’s the usual way i.e eat good, exercise often. But there is also this ‘magic’ factor that people either forget to incorporate into their lifestyle or they just don’t know what this ‘magic’ is.

But before we get into finding out what this magic ingredient is – a little history is needed.

A few years ago, about 2009, I was traveling the beautiful country of Italy. It was here that I discovered the true secrets to losing weight without doing the things you don’t like. *cougheatingasparaguscough*

I literally ate EVERYTHING. Pasta, bread, meats, oils, pizza, coke – there was nothing I would deprive myself of!

I ate everything with such pleasure. I savored every single bite, every little herb and I dwelled in the flavors for what seemed like a lifetime. Pizza had never tasted this original or tasty!

And don’t even get me started on the drinks. Uh… I think it was a glass of wine for breakfast, morning tea, brunch, lunch, snacks AND dinner (so just a normal day then?).

What about exercise? Well, we walked a lot, as tourists do. I complained a lot, as tourists… wait, no, so that was just me then?

And in those three weeks of being in Italy, I lost *drumroll* 8 kilos!

BOOM!

I manifested weight loss without actually doing anything! (Except eating more?)

How? You ask.

The answer: (this is the ‘magic’ ingredient) PLEASURE!

What the!?

Okay, so once I came back from Italy I put it to the test. I became this crazy, loving and vibrant force and I took pleasure in everything that I did, I lived in the moment and gave 100% of myself to whatever it was that I was doing/focusing on – with pleasure.

I had put my request of ‘weight loss’ out to the universe looooong ago and because I was now emitting so much positive energy (meaning NO resistance to weight loss whatsoever) I dropped weight like a mofo!

So, the trick is not to eat healthy and exercise, but to do it with PLEASURE. You can eat the bread, the chocolate, have full fat milk but this time do it with PLEASURE not guilt. Exercise with pleasure not agony, and if it gives you agony DON’T DO IT.

Find an activity that you take pleasure in doing and eat the foods that give you pleasure because the universe rewards you for feeling good about YOU. Not doing the paleo diet or cross fit! Do YOU first, please yourself FIRST and watch those kilos drop off!
